The Bricco Boschis di Cavallotto is a real bomb! The most representative wine of the cellar.
The grapes come from the Bricco Boschis cru and in particular from the 3 Colle sud Ovest, San Giuseppe and Punta Marcello vineyards.
The vinification takes place with spontaneous fermentation and semi-submerged cap maceration for about 30 days. Aging in Slavonian oak barrels lasts from 3 to 3 and a half years, followed by at least another year of rest in the bottle.
Barolo Bricco Boschis Cavallotto obviously lends itself to aging but can already be drunk with great satisfaction in the first few years. Tannin and acidity are aggressive but perfectly balanced, sinuous and velvety and the sip is very pleasant.
